Artisanal Craft Loaf

Our signature Artisanal Craft Loaf is basically a sourdough bread – or “pain au levain” – leavened with naturally-occurring wild yeast starters rather than commercial baker’s yeast. Each loaf is hand-made and hand-shaped, giving them their own personality and unique identity. “Peasant” loaf by design, our loaves’ have crusts that don’t quit, with an enviable network of interior air tunnels, creating a soft, mildly-sour, slightly nutty inside.Our Artisanal Craft Loaves will almost always differ by variations in shape, color and texture, due to their hand-made quality and the loaves’ organic nature. We utilize a small batch mixing process, which allows us to give each loaf our utmost attention, and also affords us deliberate control over the fermentation process – thus maximizing the quality of each loaf.

Perfect on their own, with cheese, or with some olive oil for dipping, these loaves are best when eaten within a day or two of baking. Our loaves can form the base of a variety of sandwiches, and slightly more “mature” loaves can be enjoyed toasted, used to make fabulous rustic croutons, or even a rugged bread pudding.

Olive & Rosemary Loaf

What’s Inside: Unbleached organic white flour and organic wheat flour, filtered water, sea salt, natural sourdough starter (organic white and wheat flour, filtered water), Olivos Del Mar Organic Sun Dried Black olives, olive oil, local rosemary, thyme, lemon zest.

Do you have rosemary growing like crazy, on your property? Or, thyme? We’ll take it off your hands! We often use rosemary in our loaves, from the bread recipients’ very own gardens. If you donate either herb to our cause, your Olive & Rosemary Loaf will only run you $8.00.

Savoring Your Bread:

Once a loaf has been sliced, your best bet is to store the bread cut-side down, on a counter, preferably on top of a plastic bag or plastic wrap. To retain a firm crust on the loaves, place them in a paper bag and then inside a tightly-sealed plastic bag. We do not recommend refrigerating your loaves, however, you can freeze them in bags as mentioned above, for up to four or five days. After defrosting, refresh your bread by wrapping it in foil and placing it in a 400 degree oven for 6-8 minutes.

Real Bagels

Our New York-inspired bagels are hand-made and hand-formed, with the same craft and care as our bread loaves. The backbone of our bagel is the same set of organic flours found in our Artisanal Craft Loaves, leavened with the same natural, wild yeast starters and just a pinch of commercial baker’s yeast.

We keep our Real Bagels real, by creating them via traditional methods: Yes, we DO boil our bagels before they’re baked. The result, along with other pieces of the process – and the addition of local, organic honey to the mix – is a lightly-golden, smooth and shiny exterior with slight resistance to the bite, and a dense, chewy interior with just a faint hint of sweetness. Our bagels are just that: BAGELS. Not bread-y, cake-y rolls with a hole poked into their bellies.

Much like our Artisanal Craft Loaves, our bagels will almost always differ by variations in shape, color and texture, due to their hand-made quality and their organic nature.

Our bagels are the perfect, perennial breakfast, brunch or lunch stand-by, best when eaten within a day or two of baking. We leave them unadorned and free of toppings, for greater freedom of culinary creativity and end-use.
